10 minute Vegan Queso

I lean towards vegan eats whenever I can but I haven't made the full jump yet. Despite my proving that vegan eats are absolutely as tasty as non-vegan, he's just not full convinced. A few days ago I made vegetarian chili and potato wedges. I was really craving some cheesy topping for the potatoes but I didn't have queso and I wasn't in the mood to run to the grocery store. So, I got a little creative with items I had in my pantry and made my own queso. Oh my goodness! It was so delicious I nearly ate it all before dinner. It took a little over 10 minutes to bake and the recipe is below for you to enjoy. You can thank me later.
You'll need:
1 1/4 cup of vegetable broth
1 cup plain non-dairy yogurt (I used Silk brand)
3 tablespoons flour
Seasoning to taste:
1 tsp Salt
1 tbs Orégano
1 tbs Cumin
1 tbs Chili powder
1 tbs Garlic
Directions:
1. Boil the vegetable broth for two minutes
2. Stir in the yogurt, then the flower
3. Continue to stir while adding seasoning
4. Lower stove top to low and stir consistently until texture is thick.
5. Cool and serve
I tried it with tortilla chips and then served it over potatoes and it was great either way.
